Black Garlic Chicken

Ingredients

2 containers (8 oz each) Food You Feel Good About Demi-Glace (Meat Dept)

1 container (1.5 oz) More Than Gourmet Classic French Demi-Glace Gold (Grocery Dept)

1/2 cup Food You Feel Good About Chicken Culinary Stock

2 Tbsp black vinegar, divided

1/2 of a 4 oz pkg organic black garlic

1 pkg (about 3 lbs) Wegmans Organic Whole Chicken Cut in Pieces

1/2 Tbsp Frontier Alder Smoked Salt (not ground)

1 Tbsp Food You Feel Good About Soy Sauce
-
1/2 Tbsp Food You Feel Good About Dark Brown Sugar

1 Tbsp Food You Feel Good About Vegetable Oil

1/2 tsp black pepper

1 pkg (20 oz) Food You Feel Good About Sliced Baby Bella Mushrooms, washed

1/2 of a 14.4 oz pkg pearl onions (Frozen Foods)
Instructions

Preheat oven to 350 degrees. Add demi-glace sauces, stock, 1 Tbsp black vinegar, and black garlic to blender; blend until well combined. Set aside.

Add chicken, smoked salt, soy sauce, brown sugar, remaining black vinegar, and pepper to large bowl; toss to coat. Marinate 5 min.

Heat oil in braising pan on MED-HIGH. Add chicken; cook, turning to sear all sides, about 5 min. Remove chicken from pan; set aside.

Reduce heat to MED; add mushrooms and pearl onions to pan. Cook, stirring occasionally, about 5 min. Return chicken to pan. Pour sauce over chicken; bring to simmer. Cover; transfer to oven. Bake 40-45 min.
