BITE OF THE WEEK: ALCHEMY KOMBUCHA & CULTURE

Alchemy Kombucha and Culture opened its doors earlier this year and has been well received by the Fivepoints neighborhood and foodie community at large, for good reason. The kombucha-based eatery is located on North Flores in an inconspicuous brown building. You’d never know they’re serving up some of the best kombucha cocktails and fresh dishes San Antonio has to offer.

 

 

Quickly becoming well known for their vegetarian and vegan fare, Alchemy also offers tasty meat dishes like their beef tartare. The kitchen uses Heartbrand Akaushi sirloin from Yoakum, Texas sourced locally through Bolner’s Meat Market. It is highly marbleized and high in monosaturated fats making it ideal for tartare. The un-marbelized fat is trimmed and the sirloin is rough chopped and tossed in a house marinade. Served with local dark rye bread, house chili and Texas Black Gold Garlic aioli, the tartare is a menu item sure to please the carnivore in your life.
